dvd::rip generates CBR mp3 audio unless you fiddle yourself with audio 
settings using the "transcode options" entry. So, if you want CBR, there
is nothing special to do.

Only Vorbis encoding is VBR (simply because CBR Vorbis is technically 
impossible).
