The 1 GB splitting isn't really necessary for dvd::rip or transcode.
Just some filesystems are too limited, e.g. FAT. So I don't expect
problems here, because you're obviously not on such a file system ;)

Yes, it is. dvd::rip grabs some necessary information for AC3
passthrough just after ripping. Since you "circumvented" dvd::rip's own
ripping strategy, the information is missing now. In the case mplayer
dumping becomes official this could be fixed, of course.
